Stuck on OpenCore boot [Alienware Area 51 R2]

I am trying to get my Alienware Area 51 R2 working again with mac os.

Config:
- Alienware Area 51 R2
- X99 chipset
- Intel Xeon E5 2683 v4 16c 32v previously Intel i7 5930k
- MSR E2 disabled
- 32 GB RAM DDR4 non-ECC 2400Mhz
- AMD Radeon VII GPU

Context:
Before upgrading my CPU, I was able to boot onto Windows and Mac Os Monterey without any problems.
But since I have changed the CPU, Windows working without any problem but it's impossible for me to boot onto Mac OS again.

I tried a lot of differents configurations, getting back to clover, building a new opencore efi from scratch, modifying bios settings ...
Nothing change.

I hope i've missed something obvious that you can point to.
