iMac late 2014 (Retina) doesn't enter 'EFI Boot' upon reboot

Initially installed Ventura 13.7.8 on iMac (Ret) late 2014 (5K), all worked well. Since some software I want to use no longer supports Ventura I wanted to update to Sonoma. I followed Mr Macintosh's YT video to the T, but I am stuck at the point where after downloading the Sonoma installer onto external drive and rebooting, I need to boot into 'EFI Boot'. I pressed command, I see 'EFI Boot', but after clicking on it it still boots into the apple logo and then the default Ventura system, not the EFI Boot I selected. I never see the next screen where I should get to click on 'install mac OS Sonoma'.

I have tried: (1) resetting NVRAM, (2) deleting all on external and reinstalling the Sonoma image, (3) using a second USB and doing the same (each time I can see that Sonoma is installed on there), (4) pressing the shift key repeatedly after clicking on 'EFI Boot', (5) pressing the tab repeatedly after clicking on 'EFI Boot'. I truly don't know what else I could do at this point, any thoughts? My keyboard is working fine, I can see that 'EFI Boot' is selected, but after that it's as if nothing were different. Thank you for any advice you may have in advance, so frustrated :(

Stuck right here, after clicking on EFI Boot I see the apple logo, then old ventura system and asking me to log in.
