Just came across this -- it's a "user experience" post with some software that can install a controlled-by-you device management policy that tells MacOS to not show you Tahoe upgrade alerts at all...for 90 days. Which is a little better, anyway.

His version adds a notahoecommand that you can run periodically to push the 90-day block out further.
