HELP! I have a iMac (27-inch, Late 2012) iMac13,2, tired upgrading to Sequoia (didn't perform well), now wanting to downgrade to an older version. Stuck with OSX 10.8.5 when reinstalling from recovery menu

As the title says, I'm looking to downgrade after attempting an update to Sequoia. It didn't perform the way I expected and figured I'll just go back. I tried to create s USB installer with another computer with my preferred machine selected, when I try to select my boot drive, my USB installer wont appear. At this point I'm trying to re install Monterey with an erased internal drive.
