Latest Sonoma crawling to a halt on MBP2015

Thanks for the awesome community, always supportive, many people started with a hackintosh and then jumped on the mac bandwagon and we're still here, trying to get the latest bit of juice out of the hardware, really appreciate everybody's time to answer for issues.

So, I've been on Sonoma for a couple months now, every now and then out of nowhere the laptop crawls to a halt, everything freezes and then I can see there's still something going on but even the mouse lags and then freezes for about a minute, at this point I can wait a bit more or force restart.

I'm doing nothing special, same old typcal work day I had with a MBP 15' 2012 with 16gb of ram, this includes: several Firefox windows with multiple tabs each, a 3D app such as Fusion or Sketchup in the background, spotify playing, switching around whatsapp, mail and notes. Nothing out of the extraordinary, fresh boot same day, several BT devices hooked up, mouse, keyboard and speaker, all logitech (LogiOptions+ looks way too suspicious lately) and an external 24'' monitor. Console app doesn't give me any useful data, and I haven't been able to trace any app during these meltdowns with activity monitor as I can't even open spotlight or launchpad when it happens. Temps are good, being monitored by iStat, extra software or daemons running don't count as this happened since first week I installed everything fresh without the extras.

TLDR: Random OS meltdowns, starts slowing down until a stop, force restart. Where do I start looking? Is there a log for OCLP or a way to pinpoint what's triggering this? Happened with Sonoma since last October, always updating to the latest release after a month or so.
