macOS Sierra Installer not seeing my hard drive in macOS Utilities

I boot from my bootable USB drive and I can get to the macOS Utilities screen. But in both the Disk Utility and Install macOS option, my internal hard drive is not visible.

In my BIOS, SATA mode is on AHCI, and my hard drive is visible in the BIOS as a boot option. So only when I get to the macOS Utilities screen is when it's not visible. I have a SATA hard drive converter/cable that lets me see my hard drive on my MacBook Pro. I am able to erase the drive and set it as GUID Partition Map and OS X Extended (Journaled). Been stuck on this for a few days so not sure where to go.

Side note: I had a previous successful install of sierra 10.12.2 on my build, but bought a graphics card and tried to update to 10.12.5 and royally screwed things up.
