A bit confused about SSDT adjustments (i.e., determining DSDT for ACPI patch adjustments)

My hardware is assembled and I'm ready to debug! However, I'm pretty lost with regards to customizing ACPI SSDTs. I'm attempting a Catalina install using OpenCore.

I'm working on SSDT-PLUG and SSDT-EC-USBX adjustments (e.g., setting EC to EC0, H_EC, etc. based on PNP0C09). However, since I don't have an existing bootable OS, the suggestions to find my DSDT (under the OC ACPI section) won't work, right? From what I understand, options for saving System DSDT, SSDTTime, and F4 in Clover Boot menu, all require a bootable OS. Does anyone have a better suggestion for figuring out this information without an OS, or perhaps a clearer guide?

This is my first hackintosh! So, if I can't figure this out, I'm thinking it'll be easier to run Clover and Mojave instead.
