Need a little help- can boot from USB but not SSD

Hey folks- thanks in advance for any help.

Specs first:

MB: Gigabyte z370n wifi

CPU: 8700k

GPU: Radeon rx 850

Wifi: BroadCom BCM 43xx

Installed Mojave via the Vanilla guide here, adding in the ACPI fix as the mobo is at f14 (which cleared a prior hurdle)

I've been away from a Hackintosh update for a while and about a month ago forgot to correctly update the Hackintosh. Was still able to boot from USB and all files appeared to be there. With the Thanksgiving break I was able to commit some time to rebuilding and decided to follow the vanilla guide here to get things up and running. I've run into two issues that I can see:

  1. Cannot boot from USB. See the attached image.
  2. Ethernet is working but about 1/3rd of the speed I can get from my wireless devices.

Wifi and handoff work. Haven't tested anything else.

While I can live with the ethernet issue and troubleshoot that, I'm a bit lost with the lack of boot ability from SSD. I tried to apply the ACPI fix to the config on the SSD EFI without any substantial change. Poking around for the last few entries in the verbose readout did not produce results so I'm hoping someone can point me towards the cause of the error.

My hunch is that the system is not seeing the EFI folder on restart or maybe it the boot drive isn't available with restart.

Any help is greatly appreciated-
