Is MacOS Big Sur fairly stable reliable as a VM on a Windows machine?

I'm a computer repair business and I have a mac in my shop which I use for the times I need a mac. It's really showing its age however and rather than replace it support apple, I was considering upgrading my main workstation and just running MacOS inside a VMware VM on it. I can upgrade this machine much more inexpensively than I can buy a mac.

I recently saw a youtube video showing the steps to get this done but I'm wondering if it's stable and reliable? I use my mac for specific tasks such as formatting a new SSD as APFS, creating bootable MacOS install media, cloning a drive with Carbon Copy, etc... So I definitely need MacOS and fully operational, full-speed USB ports.

Your thoughts?
