I'm having some trouble getting to even the installer on my 2009 Mac Mini. I've run Mojave on it previously but wanted to install Sonoma to give it a try (the Mini is just a project machine and not my daily Mac). I bought a cheap Silicon Power SSD and plopped it in it. I checked to make sure it worked first and I believe I formatted it as APFS.
I can use the OpenCore Patcher (latest version as of writing, 1.2.1) to build a usb Sonoma and then install Opencore to it (My main Mac is a hackintosh so I'm familiar with it). I boot it up and do Efi, then the Sonoma USB and it'l start booting but always freezes up fairly quick. I was wondering if anyone has any idea whats going on. I've been searching myself too and I was hoping using Safe Mode would get some activity out of it but about the same.
Normally it stops at "ACM: Env_SetVariableWithParams: set var[5] len=1 <00>."
On safe mode it stops at "AppleCredentialManager: initImpl : EOSDevice: 0. "
I've left both at these points for some time without any activity (maybe 10 plus minutes)
These are from some quick photos I took while multitasking various household stuff. I can grab the actual Opencore logs if that might be helpful.
This Mini has always been real finicky, even with the Dosdude patchers. It didn't like some USB keyboards, some SD cards, but was really rock solid once I got past all that.
