Hi, I’ve become addicted to buying old Macs and OCLP’ing them. What should I do?

I have a Mid 2014, 2.8GHz i7, 16GB RAM, 256GB SSD coming Friday. What version of macOS Should I put on it? I am currently debating Ventura and Sonoma.
