1060 vs 580

I'm getting back into the hackintosh game with my latest build, a Corsair Bulldog (GA-Z170N-WiFi + i3-6100). I'm on High Sierra and just about the only issues I have left (sleep/wake, multiple monitors) are tied to the GPU (or rather a lack thereof).

I'm torn between the 1060 and 580. Pricing, when factoring in lower power consumption on the 1060, is about the same after 1 year of use (I'm seeing 580 8GBs at about $200 on deals, 1060 6GB at about $250). I plan on using this rig for some deep learning experiments, and I know NVIDIA has superior support for AI (although I believe AMD is catching up). But my bigger concerns are how they compare with a hackintosh.

It looks like there's now a way to use RX 5xx series GPUs in High Sierra without as many workarounds... do we get full acceleration and support for 3+ displays? Are upgrades to macOS likely to break functionality?

NVidia now provides official drivers for their 9xx and 10xx series cards for macOS. Is it a simple "download and install drivers" solution on the NVidia front? I would probably prefer NVidia just for this simplicity... there are enough fragile points in the hackintosh that can go wrong/needed special attention, I would like to minimize that. Will a 1060 "just work"?
