First off, specs:
MOBO: Gigabyte UP5 - TH
CPU: i7 (haswell? 3rd or 4th gen intel)
RAM: Corsair 2x8GB 1600Mhz
GPU: EVGA 970 FTW+
SSD: Samsung 840/850 Evo, 250/500 ea.
Wifi: osxwifi.com's newest broadcom.
So I took my machine out and moved it over to an older case while I prepped to build my new machine. I had to use the boot SSD for temporary video storage, so the drive was wiped on my Macbook.
I put my machine back together, prepped a Unibeast drive with a fresh downloaded 10.12.5, and tried to installed. First time around, I dropped my ram from 2x8gb to 1 8gb stick because it would fail after "11 minutes remaining". After dropping RAM, it worked totally fine, was plugged into my GPU thru the entire process.
I tried to install the NVIDIA web drivers - they refused to install and said it needed 10.12.5 (Which I was already on?!). I kept a 10.12.4 installer on my Macbook, so I wiped the boot SSD, made a new Unibeast driver with 10.12.4, began installation again. Worked fine, NVIDIA drivers were able to install. Rebooted, and the GPU was not working. It read "NVIDIA 3mb" on About This Mac. Tried installation again, after I went and updated my BIOS, hoping that might fix any problems Clover could cause with UEFI.
I swapped to a different SSD, tried installation again, still no working graphics. I went to wipe it and then make a new installation and check over Multibeast.
Now, I've made a new Unibeast installer, which loads up the Clover start menu and offers "external" and "recovery HD". My UEFI still says "Mac OS X" as an option for boot order. I'm fairly certain I shouldn't be seeing recovery HD as an option after I've wiped a drive for a new installation.
Finally the main problem: I can go through a full installation, then it goes to restart, and when I select "Macintosh HD", it loads the bar just a bit past the apple logo then fails. Which makes no fucking sense, seeing as it was JUST working with this setup.
I have a copy of the El Capitan installer still on my Macbook but I really don't want to take a step back when I had sierra working fine.
