All SATA drives causes system to hang after and can never be mounted

I built my hackintosh when Sierra was out and since updating the High Sierra I've not been able to access my SATA drives. Whenever I boot the SATA drives are found and even mounted, but attempting to access them will cause Finder (and anything accessing the disk) to hang for a good few minutes. My boot drive is an NVMe drive so I'm not sure if this is only secondary drives, but I assume it's to do with SATA.

I've tried 3 different drives: one NTFS SSD, one encrypted HFS+ HDD, and one unformatted HDD. None of these work over SATA, but when plugged in externally via USB they will happy mount/read/write.

The only time I've had a drive mount was when I booted with AHCI_Intel_Generic_SATA.kext in /L/E and then deleted it. Suddenly my drive mounted and worked 100% 🤷‍♂️ I will double check but I'm pretty sure this didn't work a second time.

I've upload some image of my kexts and efi directories to imgur. I think the important spec is that I have an MSI Z270 motherboard, but the full spec is on PC Part Picker.

Any help would be greatly appreciated as I've been tearing my hair out for a while now! :(
