Stuck on Step 7 (Never get an install macOS from internal drive partition)?

Hello r/hackintosh,
Yeah I know, It's me again. I'm trying to do a fresh install to resolve some issues I was having but I just cannot seem to get to the same point as I did before with a booting system. I am following this guide:

(Please do not just automatically defer me to the AMD OS X forums, while their resources are useful they are incredibly slow to answer and often entirely ignore questions.)
I have a Ryzen 3 1300X on a Gigabyte GA-AB350M-D3H with 8GBs of RAM and an AMD RX 480 graphics card.
When getting up to and including Step 7 I run into a snag, however. I can run the "boot install macOS Sierra from Luke-MAINCOM" (which is my drive that I have installed to) but it only runs once or twice, going all the way through "installing" while only on the black screen with the Apple logo and the progress gauge and text estimating the time remaining. I never get to the grey screen with a GUI installer finishing off its tasks. After the black screen does its work all the way through, the installer partition disappears from Clover and I cannot go any further as boots get stuck on the line of +'s in verbose mode, as it isn't finished.
I have tried and made sure to:
Re-make the installer stick to verify it wasn't bad
Properly clean and reformat the drive fresh to make sure the partitions weren't bad
Trying with APFS disabled and enabled (as this is an SSD, with APFS enabled I get FileVault and PreBoot options in Clover when getting to the stuck, unfinished state)
Making sure I've ran the pre-install script, several times if necessary after the installer boot option reboots (as normal).
Running the post install script even if I have hadn't seen the grey screen.
I think I saw an error relating to "defferedinstall" being missing once while it was rebooting, but it was too quick for me to catch. Does anyone have any insight? Not running an Nvidia card or Intel iGPU seems to make material on fixes sparse.
