Need Some Advice on My Hackintosh Project

Hello everybody! I'm beginning my first steps towards building a G5 Hackintosh and I was hoping I could get some pointers on my parts list. I've never built a PC before so this is my first time in this world. I understand that getting compatible parts are top priority, but I had some questions concerning possible upgrades, software compatible issues, and dual booting with Mac and Windows. Below is my parts list with relevant items I've chosen, using tonymacx86 guide. Questions are further below the list.

CPU: Intel - Core i5-9600K 3.7 GHz 6-Core Processor

Motherboard: Gigabyte - Z370N WIFI Mini ITX LGA1151

Memory: Crucial - 16 GB (2 x 8 GB) DDR4-2133 Memory

Storage: Samsung - 850 EVO-Series 250 GB 2.5" SSD

Storage: Seagate - Barracuda 1 TB 3.5" 7200RPM HDD

Video Card: MSI - GeForce GTX 1060 6GB 6 GB GAMING X

For the Motherboard, are there any Gigabyte boards you think would be a worthy upgrade or should this one be more than fine?

Do I need more hard drives for dual booting Mac & Windows while having space for documents/movies/games?

Will I be fine to load High Sierra on this build or should I use an older OS?

I know this is a lot of info to throw on you guys but I'm hoping to have the most seamless time with this build. Thanks again guys for any help you can provide and information you can provide. If you need any further info I can let you know when ever I get the chance.
