Changed some Graphics options in config.plist, now corrupted SSD?! (High Sierra)

Hey folks,

So I couldn't leave well enough alone and tried to fix my dodgy graphics config - resulting in apparent tragedy.

Basically everything was working fine except for HDMI output, so no second monitor on my Z370, GTX1080, High Sierra hackintosh.

So just now I cleaned up the Graphics section of my config.plist on main drive and rebooted.

It booted into High Sierra, but "About this Mac" took a while to load and when it seemed to load slowly (and showed 8191mb of graphic memory not 8192mb).

I then noticed some missing icons (big question marks) and that keyboard did not function. Tried to open Clover editor to mount EFI and back changes but nothing would open. "You can't open application "Xcode" because it may be damaged or incomplete.

I then rebooted again and tried to use Install USB with working Clover config to get in. That's when I came across THIS (Excuse phone photos):

Tried First Aid, and a couple reboots, to no avail.

Any advice? Or ideas what exactly happened here?!
