CLover to opencore - clean install

I have some spare time on my hands due to a lockdown. Sounds like a good time to switch my system to opencore. In principle, I have a fully working hackintosh with a recent CCC backup on a second disk. I now would like to do a clean install on my NVMe disk for MacOs. My hardware is the following: Gigabyte Z370N wifi, i3 8100 CPU and Gigabyte RX580 GPU. I have windows 10 running on a separate disk.

I've read through the guides linked in this subreddit and in principle I've come across two of them: The vanilla clean install one and a conversion one. I prefer to do a clean install, do I still need to clean all the nvram stuff?

Is there any use in keeping the config.plist available somewhere or will I anyway have a new one (Clean install)?

Other things to take into account?
