How to migrate to Ventura?

Hi everyone.
I wanna migrate from a Mojave (clover) to a Ventura (opencore) on a Gigabyte H370 for a friend.
I prepared already a install usb.

My question is: what is the best way to migrate from the old system to the new OS?

First I will do testing on a clean ssd with clean install.
Next I can migrate from the old ssd (connect as external)?
Or better migrate from a timemachine backup?
If so, what settings should I use on the timemachine backup? Including system files for example.
