Recurring issue where 2008-2011 macs won't boot after applying patches in Big Sur?

Is anyone else having a consistent problem with getting Big Sur installed via OCLP on macbooks with non-metal gpus? if I can get the install to even finish and boot, then complete the dreadfully slow process of setting it up and patching it while it has no graphics acceleration,

it won't boot fully after the patches are applied.

progress bar gets maybe a quarter of the way and sits there. I've now had this issue on several of my macbooks using multiple usb drives, hard drives, OCLP 2.2.0 and 2.1.0
