Installing Sequoia on MBP Mid 2010, unable to erase disk0

Using u/MrMacintoshBlog's procedures on YT to install Sequoia, I’m at the point where I’m trying to erase disk0 to start installing Sequoia. However, this eventually fails with the error message:

Unmounting disk
The volume on disk0 couldn’t be unmounted because it is in use by process 0 (kernel)

I’ve tried this several times but it eventually fails. So I tried unmounting the disk image on the SSD in Disk Utility to see if it can be done that way. I just get a spinning ball that eventually stops but the SSD is no longer available afterwards.

Can I erase the drive in Recovery (command+R) first but will it boot from the USB installer later? Or is there another / better way to get this done?

Trying Sequoia to see if it works on this laptop. If not, I’ll downgrade to Sonoma or earlier until I find something that runs well. I’ve already installed Sequoia on a MBP mid-2012 and did not have any issues erasing disk0.
