ISO: iMac Retina 27' - late 2014, which OS should I go for?

New 1TB SSD (replaced the Fusion Drive), 32GB RAM, Intel Core i7

I need anything above (incl) Monterey to be able to run Photoshop. Which OS and particularly which version makes the most sense in my case? Obviously happy to have a newer OS, but since I will be using Time Machine for my data transfer anything that has a high likelihood to succeed would be my go-to option or my Time Machine will be useless if I have to go back to an older version...
