Mac mini 5,1 doesn’t detect OC EFI on USB drive

Hi, I’m trying to update my Mac Mini 5,1 (8gb DDR3 ram and updated to a Samsung 860 Evo 500 gb) from High Sierra to Sequoia.

I’ve followed the instructions on OC Patcher to create a bootable EFI USB drive but something is clearly missing because it only shows the Sequoia MacOS install on the boot menu and not the OC EFI boot partition.

I’ve gone through the Build and Install process multiple times, I’ve tried swapping USB drives, I’ve tried swapping USB ports, I’ve tried doing the whole process on my SSD, I’ve tried shutting down the Mini before turning it on again to enter the boot menu, I’ve tried disabling SIP in the terminal but nothing seems to work.

The only thing I could gather from all of this is that the OC Patcher software detects the EFI partition as it overwrites it every time I go to the build and install process both on the USB drive and the SSD but my Mac simply ignores the existence of said partition. How should I proceed?
