Want to try my hand at making a Hackintosh laptop

Hi everyone, first post here. I recently scored a Dell Latitude 5400 for a pretty cheap price on eBay, and I decided that I wanted to Hackintosh it, as well as dualboot it with both Windows & Linux, though I'm unsure of how to do so.

These are the specifications as I know them, I might update this list when I recieve it.

8th Gen Intel Core i5-8265U processor

Intel UHD Graphics 620 (iGPU) & AMD Radeon 540X (Discrete) (Should I use the Intel iGPU or the Discrete? I feel like the iGPU might be better, but I would prefer the discrete)

(A few different choices for WLAN cards were avaliable for it, so i'm not sure which one specifically will come in mines) Intel Dual Band Wireless AC 9560 (802.11ac) 2x2 + Bluetooth 5.0

Qualcomm QCA61x4A 802.11ac Dual Band (2x2) Wireless Adapter + Bluetooth 4.2

Intel Wi-Fi 6 AX200 2x2 .11ax 160 MHz + Bluetooth 5.0 (Optional, I probably won't have this)

8 GB DDR4 SoDIMM (Will upgrade to 16GB)

256 GB M.2 (Will upgrade to 1TB)

My main goal for this "project" is for me to hopefully be running whatever the latest version of MacOS is avaliable to run on my system, alongside a bootable Tiny11 partiton and a ZorinOS partition.

I was also hoping for some way to keep using the OpenCore bootpicker, since I think it looks the nicest.

As for what I have at my disposal, I have my main laptop (a Windows 11 machine) as well as a 2012 Mac Mini which is on Sonoma from OCLP. I don't know if I'll need either, just putting it out there. I also have enough flash drives as is so I shouldn't have much of a problem with writing anything to one.

As for how to go about it, I do think that when I get it, my first goal will probably be to install Windows 10 to get my specifications, but from that point is where i'm a bit confused. One point of contention that I've seen in the community is if it's trustworthy or not to use OpenCore simplify over building manually with the OpenCore guide. Honestly, i'm impartial to both, though the guide does seem like quite a bit more work. I have heard people say that the Simplifier makes things more difficult to troubleshoot with later on, so that does put a bit of skeptecism in my mind. Additionally, I'm a bit worried about how the bootloader situation might go. My main fear is that after installing MacOS first (preferably), that any subsequent OS install will override the OpenCore bootloader with it's own (like GRUB). I don't know how to manage all 3 OS's at once, and I'd appreciate some advice on that.

Lastly, if theres anything that might clearly cause issues based on what i've provided (like if none of the Network + Bluetooth cards that come in this model are compatible with MacOS), I would appreciate someone letting me know beforehand. If I need to end up swapping it out then it might not even be worth it to run this in the first place.
