Sanity Check for First Timer, Z370+8700K+RX590

I was going to build a PC for gaming and video editing when I realized I could make it dual boot Mac OS X and Windows. I have never put together a PC, but I have some experience configuring older Mac hardware and peripherals. (And by configuring I mean terminating SCSI chains with DIP switches, not plugging in USB cords.)

This board/CPU combo is like a build on Hackintosher and other builds I've found here via Search. However, I didn't see anybody use unique drives for each OS, they were partitioning.

I want a SSD boot drive and a HDD storage drive for each OS. (I want separate drives for Mac/Win so Win doesn't step on the Mac side.) But I want to have my cake and eat it, too, by sharing files, maybe, probably, I don't know. In what format should the drives be formatted for drag-and-drop copying?

Assuming this dual pair of drives scenario isn't bad, which OS should be installed first, Mac or Win? Which OS would be better off in the faster NVME slot? (Assuming Mojave for video editing, etc. and Windows 10 for gaming.)
