Stuck on booting macOS Installer with Info.plsit is missing (Opencore 0.7.3/macOS 11.2.3)

Hardware:

I can confirm that the kext is fine (has plist inside), tried redownloading all the kext (going debug version) and making new EFI and made OC Clean Snapshot, (before I made new EFI and OC Clean Snapshot it got stuck on different kext (SMCSuperIO.kext)), or it possible if my Big Sur DMG is corrupted? With the same EFI I can boot to mac recovery fine, but can't install through it properly (reboot to mac recovery again after completed download).

Tried disabling the kext but got no luck (stuck on the same line again).
