Best way to dualboot Windows 10/11 and macOS?

I've got a ThinkPad x280 I'd like to hackintosh (i7-8650u, 16gb/256gb)

I'm gonna most likely be using OpenCore of course, not sure if I'll use Big Sur, Monterey, Ventura, or Sonoma (any recommendations? just want something as trouble free and modern as possible. Can I easily upgrade from big sur, etc. to a newer version like Sonoma in the future?)

I've heard that the best way to dualboot was to have multiple drives but I don't have the money for that and I'm not even 100% sure that my ThinkPad supports multiple drives (I've heard that you can put a drive in the wwan slot or something).

The problem is I simply can't afford a new drive right now, and when I do get one it's likely purpose is a backup.

What would y'all do? I can't avoid dualbooting with Windows.
