Help! Trouble installing OSX on my unsupported iMac using OpenCore

I've been trying to install a newer OSX on my unsupported iMac (13.2 iMac running Catalina) for weeks now but keeping hitting a brick wall. I've seen/followed tons of YouTube videos with the typical walk through of making/using the bootable USB/EFI OpenCore setup but keep having the same issue.

The USB installs the OSX to the HD and then when it reboots and starts to install from the HD the install freezes at exactly the same point each time - black screen, apple logo, 18 minutes remaining. I've tried letting it run through the process itself and keeping ALT pressed down on the reboot to select the EFI to see if it's not picking it up itself - no difference.

I'm installing it to an external SSD (as my current OSX is also on an external SSD and runs fine) and you can clearly see the point it freezes (at 18 mins remaining) as the HD drives light stops flickering and the mouse pointer doesn't move, it just locks. I've turned the iMac off/on several times at this point too as I've seen previous comments say this fix it, but it just runs through the 'minutes remaining' process again and then locks as it hits 18 mins.

I've tried different OSXs (Monteray, Ventura), different SSDs to install to (inc a formatted internal drive), different bootable USBs (including making the new external SSD partitioned with the EFI on there) & all manner of configurations with what else is connected (firewire cables, ethernet cable, other USBs) and no matter what happens, it's the same trigger point that freezes.

I think I've exhausted any route that might seem obvious so before I either lose my marbles or give up, is there anyone else on here that's had a similar problem with the install and found a solution??
