Starting from scratch

Hey everyone,

Hopefully someone can help me out here. I'm new to mac and I was recently gifted a Macbook Air 2017 13" and it had Monterey on it. The person that gave it to me was unable to wipe it before giving it to me so I'm trying to start from scratch with it and put in a bigger SSD. I installed the SSD and I would like to put Monterey back onto it without the previous owner details attached to it. I only own windows systems apart from the Macbook. I've tried getting a DMG file but I can't seem to find a good copy of a DMG or figure out how to get it to work with windows to make a bootable installer. When I try to "alt/option" at start up, it only asks to do internet recovery and doesn't display a boot from USB option. I've tried gibMac, TechSpot, TransMac, etc. I just can't seem to figure it out. If anyone has had any success trying to start a Mac from scratch like this, please help me out.
