Any way to make a macOS installer have certain settings already enabled after first boot?

I frequently reinstall various versions of macOS on different older Macs and always end up changing a bunch of settings after each new install (disabling transparency; reducing motion; enabling tap-to-click; disabling Siri; etc.). It would be really nice if there was some kind of post-install script that could do all of these things after I install the OS.

Not sure if any folks here know how to do this or if there'd be a way to bake this in to an OCLP installer?
