OCLP has proven that Apple Intel hardware is up to the task. With a few caviots...
First, max out the RAM. It's the only way. My mid-2012 MPBs have 16GB, and that's just fine. I replaced the motherboard on my A1347 Mac Mini to get a faster CPU and 16GB. My tiny 12" MacBook Retina is so small that I forget I have it, but RAM is soldered.
Second, modern SSDs breathe new life into the old girls! Be sure to look for pre-2018 Mac Minis!
Regarding deferred maintenance, thermal paste and blowing out the dust go a long way!
Lastly, if you can replace the battery, do it now. How long will they even be around? macOS will throttle power with a compromised battery - even when on the power adapter.
Once your love of Sequoia wanes, look to Lubuntu. It is very lightweight and supports the Ubuntu apt libraries. All good.
