What level of macOS update do Hackintosh and/or virtual (VirtualBox) Macs survive?

Can we run any/all updates via iTunes, except the major ones, like only avoid Sierra to High-Sierra level of updates?

Or are all updates to be avoided? And you basically live with whatever OS version was installed in first place?
