Booting issues after installing Windows on separate internal SSD - I DONT WANT TO HOLD OPTION!

*I'll explain what happened to my machine - machine is this (copied from about this machine):
Mac Pro (Mid 2012)
2x 3.46 Ghz 6-Core Intel Xeon
128 GB 1333 MHz DDR3
Startup Disk Flash - Mac OS
Graphics NVIDIA GeForce GTX 980 Ti

 

*Additionally, the important bit, I have 2 PCie 500GB flash storages set up in what essentially seems a RAID config (one of which I use as my Mac OS and essential files/programs etc. I have a 2TB internal SSD, and a 500GB internal SSD.

------- so, because of this setup, I wasn't able to use bootcamp (something about RAID not working. It was a nightmare of 40 hours, but I finally was able to get windows installed with an external USB running the windows installation media. To do this, I had to unplug all other storage devices (including PCie), hold option on power up, boot disk using the external USB with the installation media, etc etc. It worked.

When I got into windows, I installed the Boot Camp assistant files (thinking this was vital for windows to run properly with my hardware).

*PROBLEM
Now, the problem. When I boot the computer, it goes to the gray screen, pops of a bunch of black text about the drives (as it always has done), but then it goes to a black screen that says "NO BOOTABLE DRIVE: INSERT BOOT DISK AND PRESS ANY KEY"

*Well, the boot disks are already there, one for Mac OS (I reinserted the PCie, and one for Windows.

*Now a solution is to hold option everytime the machine is booting, and I can get to the select bootdisk screen. But I don't want to do that. I want the machine to boot to Mac OS everytime, UNLESS I hold the option key down.

*Why is it defaulting to the NO BOOTABLE DRIVE error? Is it because I installed the bootcamp files and it is trying to run some sort of bootcamp startup on a really low level? Is there something wrong in the BIOS?

*Also, another symptom, when in Mac OS, I go to startup disk in system pref, and I choose to restart using "Bootcamp Windows", and it restarts and goes to that black error screen.

HELP! and also, thanks for reading this, I hope I gave enough info to pinpoint the problem. I am very stuck.
