Is dual boot hackintosh a bad idea?

Hey, guys! I'm going to build my first hackintosh and I have some doubts about the dual boot itself.

The specs: Geeek a50 mini itx enclosure (140 x 210 x 330mm) Gigabyte Z370N WIFI i7 8700(non K) Noctua NH-L9i Corsair Vengeance Lpx 3000Mhz DDR4 2x16gb 2x NVME m.2 SSD Samsung EVO 250gb(Windows) and 500gb(Mojave) Saphire RX580 8gb Nitro+ Corsair SF450 PSU 600W 80+ Gold LG 34UC88-B Ultrawide 34" 1440p Display

As you can see there are two m.2 ssds for Windows and Mac OS.

But I just watched a video from YouTuber named Morgonaut. She claims that sooner or later Windows 10 with its inevitable auto updates will corrupt the bootloader of Mac OS, and you have to reinstall it from the beginning.

As a solution she proposes two options: 1. Don't dual boot.

Not my choice, with this specs and two m.2 ssd editing 4k video using beloved FCPX, and 1080p 60fps gaming using Windows environment should be quite awesome.

2.Install Windows in UEFI mode and boot it in UEFI mode. Physically disconnect Mac OS's drive when using Windows. Boot from Clover on the USB drive.

Well, it's a lot, but UEFI mode etc doesn't seem to be a problem, booting from the USB also is no biggie. But physical disconnect one of the drives whIle we are talking about m.2 ones is quite a pain.

I've checked whether z370n motherboard has an option to disable m.2 in BIOS/UEFI...And it's seems to be there's none.

So my only hope that when the build is complete(and installation) I will find a way to disable the updates, maybe just no to use network at all.
