Advice needed. which way to go for my system?

I've been playing around trying to get my build to work.

Asus ROGSTRIX z730i, i5 8600k, GTX1080ti. and i have a Dell dw1550 on the way from China

I also grabbed a USB TPlink WN823 which is supposedly compatible, however when i try to install the driver for it on HS the option to install for all users is greyed out. i think i did something wrong with my last attempt as i get disk initialization errors at startup

I've got 1 500gb m.2 drive which currently has a Ubuntu, Windows and EFI partition.

I've also got a 256gb sata SSD

I initially tried Mojave which i was able to get booting at least but from what i've read my graphics card is only compatible on High Sierra so thats what i'm going for now.

I'm a little bit confused and each guide i read tells me to use a different method, between unibeast/multibeast or clover configurator. and many of them are somewhat aged. new kexts coming out, updates to the OS since these guides were published, conflicting information on which config.plist settings to use. whether to do them manually or not.

So the questions i have are:

Which method of boot-drive creation is the most effective?

Am i correct in going for High-Sierra, or should i just go for Mojave and wait on Nvidia drivers?

How would you set up my drives? all 3 OS on one drive with one EFI folder, or boot from the SATA SSD to clover and use that to then boot the OS' on my NVME? If so should i delete the EFI partition on my NVME?

APFS vs HFS+?

I've been attempting to use config.plists from previous builds online with z370 boards' but maybe i need to put the time in to make my own....
