Apple/Windows 10 dual boot possible on a seperate or single ssd?

I have a custom desktop pc and a dell xps 15 2019 laptop. I love windows and would like to use macOS for development purposes. I am completely new to macOS btw. I heard that macOS requires the entire disk. I have multiple ssds on my gaming desktop and only one ssd on my laptop.

DESKTOP: i was thinking of downloading macOS on one ssd and have windows 10 on another ssd. But i have no clue how dual boot would work in that situation. Is it even possible.

LAPTOP: I am currently dual booting windows 10 and ubuntu on my single ssd. Since im planing to install only macOS and Windows10, there would no longer be a need for Ubuntu. So How would i do this? From what i heard long ago, i dont think i can partition the ssd to download macos. so would i need to download macOS first and then install windows 10?
