Is there a way to run Windows on one monitor and MacOs on another?

My setup is like that. 1 SSD with Windows. 1 NVME with MacOs OC. 1 GPU dedicated to Mac boot on monitor 1 over hdmi and 1 GPU runs Windows over DP on monitor 2. My question, I want to boot both OS at the same time and have them work in parallel. Is this possible? if not please explain why not
