Virtual OSX - Server HW choices

I got an old 2011 mbair. It lost support for the newer OSX a long time ago. I'm thinking of "reviving" it by adding a OSX (big sur) VM to one of my proxmox servers and just remoting into it from my Windows desktop.

What would be the "optimal" server HW be? e.g.: pcie for pass-through. As in: least hassle to set up and configure? (not looking for maximum performance.)

Is it possible to use the old mbair sata ssd and just boot of it in a vm?
