Choppy Audio on Ryzen 5 5600X Hackintosh persisting on OpenCore 0.7.2

The build:

CPU: Ryzen 5 5600X
Motherboard: Gigabyte Aorus Pro Wifi X570 I
RAM: 16 GB Corsair Vengeance LPX 3200 mhz
GPU: RX580 8GB
SSD: Samsung 860 EVO 500 GB, Gigabyte 250 GB m.2 NVME

So, the problem experienced is that audio is choppy with USB devices (tested with an EVO 4 and a Focusrite Scarlett 6i6). In an attempt to solve the choppy audio, I have:

- rebuilt the EFI to a completely new fresh EFI using OpenCore 0.7.2;

- remapped the USB ports using USBtoolbox, keeping to the 15 port limit;

- disabled onboard HDA in the BIOS;

- set PCIE speed to PCIE 3.0;

- validated with a windows installation on a separate drive that the USB and audio is working.

At this point I'm at my wits end as to whether the issue is with the Hackintosh or whether it's really an issue with the Focusrite Scarlett 6i6 and the firmware update my brother did a while back.

I really dunno what to do anymore.

I can provide my EFI if anybody wants to take a crack at it.

Anybody have any ideas?
