Big Sur Installer Error

I had successfully installed macOS before (Catalina > Big Sur and dual booted with Windows) but I recently upgraded my CPU/Motherboard to Comet Lake, forcing me to create a new USB installer. Now I've got this problem.

* Hardware:

CPU: i5-10400f

GPU: RX 470 Nitro+

RAM: Corsair Vengeance 2x8 3200Mhz

Motherboard/Laptop model: Asrock B560 PRO4

Screen(s) Number: 2

Screen(s) Resolution: 1080p

Audio Codec: Realtek ALC897

Ethernet Card: Intel® I219V

Wifi/BT Card: N/A

* What guide/tool I followed:

Dortania

* What part I got an issue with:

After choosing 'EFI (External) (dmg)' I get a black screen for a while and then the error 'OCB: LoadImage Failed - Unsupported'. This is on the RELEASE version of OC 0.7.5. Based on Googling I'm also aware that the '(dmg)' isn't supposed to be there so I assume that's part of the problem.

I switched to the DEBUG version after and it gave me A LOT more information.

I've done plenty of Googling and tried everything that's been suggested but I'm still getting the same error.

* What files/config I am using:

OC folder

ACPI

Drivers

Kexts

Tools

Config

Debug log
