Basically its macOS being a b*tch. This video explains the issue in detail, but TLDR; macOS resolution scaling is probably why your animations (like opening launchpad) are laggy, since is affects GPU performance heavily, especially if you are using iGPU: https://www.youtube.com/watch?v=kpX561_XM20

This probably happens if you are using:

• A 4K monitor at around 27 inches
• running on iGPU that is already configured properly
• Running at scaled display resolution

Basically running scaled means that poor iGPU is upscaling everything to 5K then cutting it down to like 1440p if that's your scaling option, 60 times every second.
