All apps crash after upgrading to Sonoma on iMac 27" 2013

I have been using OpenCore successfully to upgrade my iMac 27" 2013 through Big Sur, Monterey and Ventura. It always worked flawlessly. I updated the OpenCore version regularly and installed the Post-Install Root Patches after each update. Everything was smooth until Sonoma.

I am currently running OpenCore 1.1.0 and Sonoma 14.1 but occasionally, can be after 1h of the computer sitting idle or after 1min, all apps crash in cascade, almost no app can be opened and then all I see is the desktop wallpaper with absolutely no other UI element. I'm forced to use Cmd+Shift+Q to logout and hit the Restart button. After a restart, everything works well again until it sits idle for a while then it happens again.

I suspected it could be related to power management so I disabled any screensaver and all sleep and power nap options. Essentially I just use Ctrl+Shift+Eject to turn off the screen but the iMac runs all the time without sleeping. Then I come back later to it, press a key, the display turns on and usually I can tell the issue is happening because the Chrome tabs are crashed, Aw snap.

Do you have any ideas how to fix it?

If not, could I just reinstall Ventura over Sonoma, without losing data and how should I do that? Should I just create a macOS USB installer from OpenCore and use that?
