Just got MBP mid-2012. Which is recommended MacOS version to install?

Hello, /r/OpenCoreLegacyPatcher!

I just got my first ever MacBook Pro. I upgraded it with parts I had laying around (2x4GB of RAM, 240GB SSD) and installed Catalina on it. I am planning to get ahold of 2x 8GB RAM kit in future. I have heard about OCLP before, and I want to give it a try on my MBP. I just have few questions about it:

1) Which OS install would be recommended to install on this machine? I've seen people installing Ventura, Sonoma, Monterey etc, but by reading this subreddit for a bit I've seen more recommendations for Monterey.

2) What about security patches? Does OpenCore Post-Install Root Patcher takes care of it? Also, I read that automatic updating needs to be turned off. I guess it is to not to break the OS install with OC Legacy Patcher?
