Best macOS version for my PC

I have a PC with the following configuration:

i5 6500, RX 580 8 GB, 512 GB NVMe, 32 GB DDR4 RAM

I already have a ready EFI for installing macOS from Mojave up to the latest version, but I’d like to know which version I should install.

I will be doing video editing using Final Cut Pro and DaVinci Resolve, as well as music production and mixing using Logic Pro X.

Which version of macOS would give me the best performance for these activities?

Note: The app versions don’t need to be the most recent. I’ve been using a 2012 MacBook Pro running Catalina for a long time, so I’m familiar with older versions, but since this Hackintosh is more powerful, I’m unsure which macOS version to use.
