Can I run OS-X off of an external hard drive/SSD?

I am planning ob buying a MBP 13", and I use video editing programs that would take a long time rendering normally.

My university has Mac pro workstations that I can use, is it possible to say do the work on my computer normally and then put MacOS on an external SSD , plug it in a mac pro and render what I need?
