New Hackintosh build Gigabyte Z390 9600k Vega56 - stuck during boot

New to Hackintosh and Reddit (sad, I know) - I hope I'm posting this correctly, if not then let me know what I should do.

I'm getting stuck during the initial boot right after choosing the MacOS Installer from the Clover menu. I get to the Apple logo, the progress bar gets to ~60% and then I get the prohibited symbol.

System: i5 9600k Gigabyte Z390 Aorus PRO Wifi PowerColor Vega 56 Red Dragon (2x 4k monitors connected to the HDMI ports, if that could be a factor)

I'm sure this is a newbie/uneducated issue that I've ran across and I just have to tweak the configuration. There are a lot of guides and fixes, some of them have contradictory setups in the UEFI so I'm not sure what to do. Any help would be awesome!
