Can I create Hackintosh on this PC build to create filesystems having 32K block sizes or larger?

I have a PC with:

Asus Z170 Pro Gaming Motherboard

Intel i7-6700K 4.00 GHz processor

64 GB DDR4 PC-3000 MHz Ram optimized for my motherboard

Nvidia GTX 1080

1 TB Samsung 860 EVO SATA III SSD Blank File System

500 GB SSD with Windows 10 installed on it.

Question:

Can I add a Hackintosh OS to my 1 Terabyte SSD? I was considering linux, but I am extremely dissatisfied that the kernal page size of ubuntu/linux is an unchangeable 4096 bytes. It is impossible for me to create a file system (any fs) with a block/sector allocation size and node/leaf size greater than 4096 bytes (4KB) on linux to the best of my knowledge.

I read that a Mac can use larger block sizes. I want a 32K or 64K block size on my file system because I will be doing a lot of read/write operations on very large files. Optimizing my Read/Write speed is important. Is a Hackintosh a viable option for me?
