Vanilla Issues

I posted this in another thread, but I think it got lost in all the comments: (Sorry if I'm spamming).

The Clover Setup section in the Vanilla guide is confusing me.

It says I need EmuVariableUefi-64 if I don't have a Z370 300 mobo. My Mobo does not have UEFI, its an old fashion BIOS. So, do I keep all the UEFI options clicked?

(I have an Asus Rampage III Formula -X58)

It also mentions UEFI Booting only. Does this emulate UEFI or something like that and I need to use it?

Also, I followed the directions and it didn't boot from the USB. Doesn't do anything. Is this related to the UEFI issue? Or did I miss something else?
