Install Hackintosh on a separate ssd with win11 on another drive?

Hello! I have a installation of win11 running on a machine with the folloving specs:

AMD Ryzen 7 5700G GIGABYTE B550I AORUS PRO AX - AMD B550 - AMD AM4 socket - DDR4 RAM - Mini-ITX Corsair 32GB (2x16GB) DDR4 3200MHz CL16 Vengean

I also have an extra m2-SSD that i'm not using at the moment. Is it possibe to install Hackingtosh on that one wwithout having any affect at all on the current win11 installation? And if so wht would the best way to go be?
