First attempt to hackintosh, can’t install (High Sierra)

As the title says, it’s the first time I’ve tried to install macOS on custom hardware. I’ve tried following guides from hackintosher, tonymac, vanilla guide etc. and always the same result: kernel panic trying to load the installer from a USB.

The text is overtaken by memory addresses so I can’t see much to go on. I suspected the crash was due to invalid characters in the MATS table so I used clover configurator to drop that table but it’s still panicking.

I can’t figure out how to view the text after a crash dump, using -v and -keepsyms but what does that do? Save a text file to the USB?

Hardware: i7 8700k on a Gigabyte z370 Aorus Gaming 7 Corsair Vengeance RGB 3000MHz 4x8GB Gigabyte Aorus GTX 1080ti Samsung 960 Evo nVME drive (x2, Windows 10 on the first one) Toshiba 3TB HDD (x3, hardware RAID 5) Gigabyte GC-Alpine Ridge Thunderbolt card Asus Wi-Fi card (Broadcom chip)

Using a 32GB USB stick for installer, it’s a USB 3.0 stick and I’ve tried it in 3.0 and 2.0 ports. Tried using EFI folder from hackintosher prepared for this motherboard, generic EFI folder built using tonymac’s guide, vanilla guide, a few others.

I prepared the installer using terminal on my MBPr as instructed in the guides.
